1 T cup quinoa 2 T cups water
Slug of extra-virgin olive oil 2 limes, juiced 2 teaspoons ground cumin 1/4 teaspoon chilli powder (you can add more later to taste)
some halved cherry tomatoes 1 can black beans, drained and rinsed 5 spring onions diced half red pepper diced and anything else you want really.
Bring quinoa and water to a boil in a saucepan. Reduce heat and cover, simmer until quinoa is tender and water has been absorbed, 10 to 15 minutes. Set aside to cool.
Whisk olive oil, lime juice, cumin, chilli together in a bowl.
When the Quinoa is cold Combine together in a bowl. Pour dressing over mixture toss to coat and keep in fridge, lasts for days (but not in our house).
